Big Fat Daddy’s Famous Pit Beef 

Got Beef?®  We do!  We specialize in Baltimore’s Original Pit Beef and Texas Beef Cheesesteaks ! 

Big Fat Daddy’s was originally famous for our “pit beef”  which was marinated in the famous “dry rub seasoning” .  It gained fame by promotion of Steven Raichlen, who wrote us into Saveur Magazine, the New York Times, and eventually inducted us the National Food and Beverage Foundation’s permanent exhibit of the Trail of Smoke and Fire.  We also have articles all over the web. On the road or at catering events, this pit beef is still the signature style thirty years later.  Wayne’s select fresh chunks of beef  which undergo a five step rubbing, marination, and grilling process before they make it on your mouth.  Different cuts are used, often bottom round slabs with brisket attached, sometimes top round.  We can’t tell you the top secret grilling process, but it starts with trimming and a 3 day dry rub marinade process. It ends being grilled over a hot pit with select woods, and melting in your mouth.

Curbside:  PIT BEEF: 

BIG FAT DADDY’S  FAMOUS BALTIMORE PIT BEEF:   Large hunks of beef, generally crispy on the outside and rare inside. The beef chunks are grilled at high temps for a good bark yet moist inside due to our special marination and grilling process.   Sliced thin and piled high, just add horsey sauce and white onions,  and a bit of BBQ on a kaiser roll, the signature dish would be bbq sauce, white onions, and our blend of tiger sauce (horsey and mayo mix) Oh yeah, So good.

Big Fat Daddy’s Classic Pit Beef is thin sliced and sauteed down for shredding into a delicious texas cheeseseak ! 

No fake meat here! Originally known for the thin sliced pit beef, we now do a Texas Style Beef where we just give you a party in your mouth! This is on the road, on a sub, and comes as a TEXAS BEEF sub or TEXAS CHEESESTEAK.  The only difference is mostly, due to health departments on the road, we serve it well done .  The same smokes in flavor, this beef is sliced and grilled to well done, soaking in au’ jus for use on your Sub, Cheesesteak, or as a Beef BBQ, with a touch of our signature BBQ Sauce. A regular Philadelphia cheesesteak can’t compare, now you have real beef with a smokey, hickory flavor to any dish and is so divine.
